Transformation takes time. So does great mezcal. In honor of that slow and deliberate craft, we’ve partnered with global Latin American restaurant Amazónico to create something truly unique: the Amazónico Lost Explorer Infuser, a first-of-its-kind system designed to add another dimension—time—to the cocktail experience.

Created by Amazónico’s Head of F&B, Giannis Apostolopoulos, this custom infusion system draws inspiration from the patience and evolution of the Amazon River, mirroring its journey through time and land. With six glass bowls, the slow cold-drip process—lasting 12 to 36 hours—gradually extracts deep, layered flavors from precisely selected botanicals, herbs, and spices. Unlike simply mixing ingredients into a cocktail, this method allows the flavors to fully integrate into the mezcal itself, enhancing its character without overpowering its natural complexity.

The result? Two stunning cocktails:

🍹 Içá – A bold concoction of Espadín and Salmiana infusions, combining chicha morada, membrillo, pineapple, and a blend of spices. The result is a cocktail with smoky depth, vibrant spice, and a rounded sweetness.

🍸 Javari – A lush, green cocktail showcasing the Tobalá infusion with papaya peppercorns and marigold tea, offering a subtle aromatic complexity and just a whisper of spice.

Both are available exclusively at Amazónico London and Dubai—where craft meets curiosity, and every sip tells a story of time, transformation, and exploration.
